White Coconut Chutney
TOTAL TIME:
15 minutes
INGREDIENTS:
- 1 cup frozen grated coconut
- A small piece of ginger (1/2 inch)
- 1-2 green chilies
- 1 sprig curry leaves>
- 1/4 tsp tamarind concentrate or 1 tsp grated raw mango
- 1 tsp roasted channa dhal
- salt to taste
- 1 tsp oil/ghee, Mustard seeds and curry leaves for seasoning
Seasoning:
DIRECTIONS:
Warm frozen coconut for 30 seconds in the microwave.
Grind all ingredients with little warm water to make a smooth chutney of thick consistency
Heat a tsp oil/ghee add mustard seeds and curry leaves. when seeds splutter, add to chutney and cover.

Variations
-add 1/4 cup of mint leaves or cilantro to the above for mint chutney
– substitute garlic instead of ginger for garlic coconut chutney
– add 1/2 cup roasted red or green peppers.
