Vegetable Lavash Rolls
SERVINGS: 20-24 pcs approx
TOTAL TIME: 30 mins


INGREDIENTS:

3 large rectangles of lavash wrap ( available at Trader joes )
5 Tbsp Hummus ( spicy red pepper hummus ( available at Trader joes works well)
5 Tbsp cream cheese

Veggies:
3 Avocados slices cut into half and sliced thin
3 Tbsp roasted red peppers
3 Tbsp chopped sun-dried tomatoes
3 Cups baby Spinach or Arugula
1 medium zucchini or cucumber peeled and sliced into thin sticks.(optional)

Seasoning:
Garlic Powder, Red Chile Sauce/black pepper Dry Oregano or seasonings of your choice to sprinkle on top


DIRECTIONS:

Warm lavash wrap one at a time for 10 seconds to make it pliable.

Spread 1-2 Tbsp of cream cheese and hummus uniformly on each lavash wrap.

if using Zucchini, grill it for few mins in a toaster oven.
Arrange a layer of cucumber (or zucchini) so that they lie parallel to the shorter edge of Lavash bread. This makes it easier to roll.

Repeat with avocados next to it.

Top all over the wrap with Sun-dried tomatoes, red pepper and spinach.

Sprinkle seasonings on top.

Roll up the Lavash roll as tightly as you can. Trim off the sides, and cut into 1 inch rolls, cover and refrigerate if needed(few hours) until ready to serve.


CREDITS/NOTES:

May substitute tortillas or roti instead of lavash wrap and Pesto instead of hummus.
