Vegan Asparagus Soup

INGREDIENTS:
1.5 cups asparagus chopped to 1 inch pcs
1/2 cup coconut milk
1/2 inch ginger optional
1/2 cup chopped onions
1/2 tsp olive oil
Lemon juice to taste optional
Black pepper and salt to taste
DIRECTIONS:
Warm some oil, add onions and ginger and stir fry for 2-3 mins
Add asparagus and cook in 1 cup of water for 5 mins
Grind to smooth paste with coconut milk
Bring to boil, add a bit of water if soup is too thick.
Top with salt and pepper.
Lemon juice optional.
CREDITS/NOTES:
Simple creamy soup. You could add some chopped tofu if you like or just enjoy it plain.
