INGREDIENTS:
1 bunch Swiss Chard – coarsely chopped
1 can diced tomatoes
2-3 medium carrots – chopped
5-6 cups of vegetable stock ( Trader Joe’s low sodium broth works great)
1 can white beans ( Pinto beans ,Red kidney, black beans, Garbanzo beans work fine too)
1 Large Red Onion – chopped
3 large cloves of Garlic- crushed
1 tbsp Olive Oil
1/2 tsp Oregano ( optional)
1 tsp lemon juice for flavor ( optional)
Pepper & Salt to taste
DIRECTIONS:
Fry Onions, Garlic and Carrots in Olive Oil
Add Tomatoes and Vegetable stock and bring to a boil. Simmer for 10-15 minutes.
Add Beans and Swiss Chard, oregano and simmer for 10 minutes. Add lemon juice and pepper and serve..

I got this from my good friend Laurie Shimizu. This is a very hearty soup & so easy to make. If not Swiss chard, kale or spinach can be used too.
