Sweet and Spicy Dosa
SERVINGS: 10 dosas


INGREDIENTS:

Spicy (Pathrode) Batter recipe:
1 1/2 cups rice
5 Tsp coriander seeds
3 Tsp cumin seeds
1 teaspoon urad dal
1 teaspoon methi seeds
1/4 teaspoon turmeric
6-8 dry red chillies (bydagi) – as per taste
1 med lime sized tamarind or 2 tsp tamarind concentrate
1-2 tablespoon brown sugar or jaggery As per taste
1/2 cup coconut
1 sprig curry leaves
A pinch of asafetida
1/4 teaspoon turmeric
salt to taste

Dosa recipe:
1 1/2 cups Spicy Pathrode batter
1/2 package frozen spinach(thawed) Or Chopped cabbage.
1/2 finely chopped red onion
1/2 tablespoon wheat germ – optional
1 Tablespoon flax seed powder -optional
Salt and green chillies to taste


DIRECTIONS:

Pathrode batter:
Dry roast urad dal and methi seeds until you smell the aroma.Add cumin, coriander and red chillies and riast few more minutes. Cool and add to rest of batter ingredients, Grind to a fine batter with just enough water (thick dosa consistency) the batter should be sweet/sour/spicy. This batter can be refrigerated to use when needed.

Spicy Dosa:
Mix all ingredients under dosa batter together. Add some water to get to regular dosa batter consistency and the taste should be equally balanced with sweet/sour/spice and salt.

In a lightly greased griddle pour 1 full ladle of batter. Spread to roti thickness.
Drizzle a tsp of coconut oil or ghee on top. Let crisp on both sides to golden brown .

Serve hot with ghee or butter .

Notes:
-Instead of Spinach you can use kale ,methi leaves, beet leaves, dill leaves or cabbage.

-Extra batter may be refrigerated or frozen and used later.

-Another variation is to dip slices of Potato, eggplant, ridge gourd, or zucchini blossoms in batter and lay on hot griddle in a circular arrangement so they touch and then crisp both sides like you would with dosa.

-This batter is great for making Veggie pakoras. Just dip veggie slices in batter and deep fry till golden.
