Squash & Brussel Sprouts Salad

INGREDIENTS:

1 cup cubed pumpkin or any kombucha squash
1 cup halved Brussel sprouts
1/2 cup grilled zuchini optional
1/2 onion Sliced thin
2 cups greens – spinach or kale
2 tbsp cranberries
2 tbsp Pumpkin seeds

1/2 cup Feta or goat cheese

Dressing
Olive oil
Pepper
Lime juice


DIRECTIONS:

Coat onions squash and brussel sprouts With olive oil and roast in oven for 15-20 mins. LEt it cool. Mix in the rest of the ingredients except cheese.
Add Feta cheese and dressing just before serving
