ridge gourd chutney- brown
SERVINGS:

INGREDIENTS:
1 cup chopped ridge gourd peels ( or yam(suvarna gadde)/beets/tindora/red pepper)
1 tbsp urad dhal
3-5 red chilies adjust as needed for spice ( byadagi)
1/2 cup grated frozen coconut
1/4 tsp tamarind paste
1/4 tsp jaggery
pinch of hing
Sprig of curry leaves
Mustard seeds, Urad dhal, curry leaves & ghee for tempering
salt
DIRECTIONS:
Cook gourd peel in water, tamarind, jaggery and salt.
(The soft center portions can be used elsewhere for dhals etc.)
Roast urad dhal, red chilly and hing in ghee until dhal is golden brown
Grind all items to smooth paste with coconut.
Temper with mustard seeds, urad dhal and curry leaves in some ghee or coconut oil or
