Plum pickle
TOTAL TIME:
1 hour
INGREDIENTS:
Plum pulp – 4-5 cups
Sesame oil – 3 tbsp
Jaggery 1 tbsp
Asafetida – 1/4 tsp
Red chilly powder as needed
Salt a needed
Spices to roast and powder:
Fenugreek seeds – 1 tsp
Mustard seeds – 1 tsp
Curry leaves – 1-2 sprigs.
DIRECTIONS:
Rinse and cook plums in very little water, separate out seeds and extract pulp from plums (Approx 4/5 cups) This part can be done ahead of time and refrigerated or frozen.
Heat oil, add 1/4 tsp mustard seeds, once it splutters add plum pulp, jaggery and spice powder.
Cook for about 30-40 mins or until oil separates from sides of pan. Adjust chilly powder & salt as needed.
Store in the fridge in a well sealed container.
