INGREDIENTS:
1 bunch methi leaves chopped fine (1.5 cup packed)
1 large onion – chopped fine
6 cloves garlic – crushed or chopped fine
1.5 cup cooked brown rice
1/4 cup grated carrot optional
1/2 cup Lima beans or edamame optional
1 tbsp chutney powder according to spice level (Rasam pd can be used too)
4-6 Cashews
Salt to taste
2 tbsp ghee
DIRECTIONS:
Warm ghee and add garlic, onions and cashews. Fry until onions are translucent
Add chopped methi leaves and stir fry for 10 mins. Add lima beans or peas and grated carrots.
Add chutney powder, salt, turmeric stir for another 5 mins. Finally mix in rice and serve with yogurt and cucumber raita
CREDITS/NOTES:
My mother Saroja’s recipe that is usually made with basmati rice.
-I added the lima beans for some protein.
-Can be made with quinoa instead of rice.
