Green Bean and Chickpea Salad

INGREDIENTS:
1.5 cup chopped green beans (1 inch)
1.5 cup cooked chickpeas
3 tbsp sun dried tomatoes ( trader joe’s dry version – not in oil)
1/4 small onion sliced thin
1 tbsp pine nuts
2 tbsp chopped marinated artichokes
2 tbsp diced red pepper
2 tbsp feta cheese or parmesan shavings
1/2 cup cooked Farro/broken wheat optional
1/2 cup chopped parsley or cilantro
Dressing
2 tbsp Olive oil
1/2 tsp pepper & salt
1.5 tbsp fresh lime juice
1 tsp dry Italian herbs
DIRECTIONS:
Steam green beans for 5 mins and let it cool. Mix all ingredients. Mix dressing ingredients and fold into salad up to an hour before serving. Refrigerate until ready to serve.
