Fruity Spinach Salad
SERVINGS: 4
TOTAL TIME: 15 minutes


INGREDIENTS:

1-1.5 cup fruits – whole raspberries, halved strawberries, peeled and cut orange or kumquats
2 cups Arugula ( or baby Spinach, kale, spring mix)
1/2 small red onion- thinly sliced
1/2 Avocado – chopped – optional
1/3 cup lightly toasted walnuts or pecans – For extra flavor, you could caramelize it with brown sugar or honey and toast.
Feta cheese- as needed

Dressing:
Orange or raspberry preserves(or honey), olive oil and balsamic vinegar a pinch of salt & pepper.


DIRECTIONS:

Mix all ingredients and add dressing just before serving.

My friend Geeta introduced me to the idea of mixing in fruit in salad. This one is a saturday lunch Item for us since many years now.
If you do not have fruit preserves, use honey.
