Fiesta Salad
INGREDIENTS:
1 can black beans (15 oz)
1 can pinto beans or kidney beans (15 oz)
1 can white beans (15 oz)
1 can corn or frozen (15 oz)
2 red/yellow pepper chopped
1 red onion chopped
1/4 cup chopped cilantro
Dressing:
1/3 cup olive oil
1/3 cup red wine vinegar
2 tab lime juice
2 tab white sugar
1 tab salt
1 clove crushed garlic
1/2 tsp cumin pd
1/2 tab black pepper
Dash hot pepper sauce
1/2 tsp chili pd
DIRECTIONS:
Rince and drain all beans and corn. Combine in large bowl with peppers and onions
Whisk together all dressing ingredients.
Mix all together and chill thoroughly.
