Fennel salad
SERVINGS:
3-4 persons
INGREDIENTS:
1 fennel bulb
1 stalk Spring onion chopped
1 orange peeled and sliced (blood orange or navel orange)
1 green apple thinly sliced
1/2 cup watercress chopped
Toppings
1 tbsp dry cranberries
1 tbsp toasted and chopped walnuts
Dressing
1/2 Lime
1 tsp Honey
1 tsp olive oil
Crushed fennel Seeds
Pepper
Salt
DIRECTIONS:
Cut out fennel stalks from bulb and peel away outer most layer of bulb. Quarter the bulb and slice very thin. Save some fennel fronds and use it to garnish. Mix in all other ingredients.
Toss with dressing and serve.
