Almost Falafel Salad

15 minutes
INGREDIENTS:
2 Veggie burgers ( preferably chipotle black bean burger)
1/2 cup finely sliced purple/green cabbage
1/2 cup chopped cucumber
1/2 cup chopped tomato ( Trader joes sun dried tomatoes optional)
1/4 cup chopped onion
1 cup spinach of any kind
Parsley for garnish
1/2 carrot – shaved with a peeler optional
1/2 cup Brown or yellow chickpeas optional
1/2 cup cooked and chopped beets optional
Dressing:
Hummus ( Trader joes spicy hummus works out well) and Lemon Tahini dressing as needed.
DIRECTIONS:
Cook Veggie burger according to package directions & grill for few minutes on stove top to crisp. Chop into 1 inch squares
Mix in rest of ingredients.
Top with dressing.
