Eggplant Parmigiana
SERVINGS: 4 persons
TOTAL TIME: 1 hr


INGREDIENTS:

1 large purple Eggplant
2 Eggs (or egg whites) beaten well
3 tbsp all purpose Flour
3 tbsp Breadcrumbs ( mix in with Italian herbs if required)

1 bottle of TJs Spicy tomato marinara
16 Oz block of Mozzarella cheese (sliced thin or grated)


DIRECTIONS:

Prepare Eggplant:
Peel Eggplant and cut into 1/2 inch thick round slices
Dip each slice in flour/eggs/bread crumbs (in that order) and shallow fry each slice in a skillet for 5 mins on each side

Layer Marinara sauce at the bottom of a rectangular dish.
Arrange alternate slices of Eggplant & Cheese slices.
Pour marinara sauce over the slices. Cover and bake for 30 mins at 350f.
Top with some grated cheese and bread crumbs and bake uncovered for 3-4 mins


CREDITS/NOTES:

Alternately, You could broil coated eggplant slices for 5 mins, turn over bake another 5 mins until both sides are golden.
