Egg Biryani
SERVINGS: 3 persons
TOTAL TIME: 20-30 mins


INGREDIENTS:

For the Biryani:
Basmati rice- 1 cup
Whole or green lentils – 1/4 cup ( soak in water for 20 mins)
Water- 2 cups
1/2 cup chopped mint
1/2 large onion
1/2 tsp red chilly pd
Few bay leaves
Tomato sauce – 1 cup

For the Eggs:
1/2 tsp garam masala
1/2 tsp turmeric
Boiled eggs – 1 or 2 per person

Salt & Ghee as needed.


DIRECTIONS:

Warm ghee and add onions and bay leaves, fry until translucent, add mint fry few more minutes.Add tomato sauce rice and lentils, water and cook in a rice cooker until done.

Warm some oil, add turmeric, garam masala. Add Eggs and stir fry for a minute until the egg is coated with the spices.

Top the biryani with spiced boiled eggs and some cilantro.
