Dates and Coconut Kheer
SERVINGS:
4 persons
INGREDIENTS:
1/4 cup rice ( Moong dhal, broken wheat, or khus khus Etc can be used instead of rice)
1 can coconut milk
3/4 cup dates soaked in warm water
7 cashewnuts
1 tsp cardamom pd
1/4 tsp saffron soaked in 1 tsp water
Garnish
3 tbsp cashewnuts/raisins toasted in ghee
DIRECTIONS:
Cook Rice or Moong dhal in enough water.
Blend cashews, dates, cardamom and coconut milk to a smooth paste
Mix in with cooked Rice or Moong dhal and slowly bring to a simmer. Add saffron.
Garnish with Cashewnuts and Raisins toasted in ghee

Variation: Instead of rice you could use Channa dhal, vermicelli, ragi noodles, broken wheat or poppy seeds. In case of poppy seeds (khus khus) dry roast it and when cool, grind along with dates.
