INGREDIENTS:
Bitter gourd – 2 cups sliced thin
Onions – 1 cup sliced thin
Turmeric – 1/2 tsp
Amchur powder – 1 tsp ( or as needed )
Red chilly powder – 1 tsp ( or as needed )
mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Coriander powder – 1 tsp
hing – 1/4 tsp
salt
Oil – 3 tbsp
DIRECTIONS:
Cut bitter gourd into small pieces. Add turmeric, salt and leave aside for 15 mins. Squeeze out the bitter juice.
Warm oil and add mustard seeds, cumin & red chilly.
When mustard splutters, add bitter gourd, . When bitter gourd is soft, add chopped onions.
Saute for another 15-20 mins until onions are done cooking (almost crisp).
Add coriander powder, chilly powder & amchur powder.
Serve hot with rice/rotis.

This can also be made the south Indian way by using tamarind ( instead of amchur), Rasam powder ( instead of chilly pd) and some jaggery for sweetness.
Air fry method: Mix all the spices, salt etc toss in bitter gourd, airfry for 10 mins, add onions, airfry for another 5 mins.
