Roasted Squash and Fig salad
SERVINGS: 4
TOTAL TIME: 30-40 mins


INGREDIENTS:

Squash – 2 cups cut to small cubes
Black mission figs – 5-6 cut into halves
Apples – 1 sliced apples
Arugula – 2 cups

Dressing:
Balsamic vinegar, olive oil
salt, pepper

Topping:
Trader Joe’s Toscano cheese in Syrah or parmesan
Walnuts or pine nuts


DIRECTIONS:

Bake Squash in a section of the sheet pan at 400F for 15-20 mins.
Add apples and figs to the pan and continue baking for another 10 mins.
Take out of the oven and let it cool
Lay out layer of greens, and then apples and squash and figs. Top with dressing and toppings and serve.
