Carrot Rice
SERVINGS: 2-3 persons
TOTAL TIME: 30 mins


INGREDIENTS:

2 cups grated Carrots
1 medium onion sliced thin
2 cups cooked basmati rice (or Quinoa)

Grind:
1/2 cup grated Coconut
1 tsp poppy seeds
2 Red chillies (as per taste)
2 tbsp coriander seeds
Salt to taste

Tempering:
1 tsp mustard seeds
1 red chilly
1 tbsp ghee

Garnish:
Cilantro, coconut, ghee and cashew nuts


DIRECTIONS:

Warm some ghee and add mustard seeds and red chilly. When it splutters, add onions and fry until translucent.
Add carrots, salt and cook for 2-3 mins
Add the ground coconut paste and stir for few minutes.
Finally add rice or quinoa, mix well and garnish.
