Vegetable stuffing for dosa
TOTAL TIME: 20 mins


INGREDIENTS:

Vegetables- 2 small Potatoes,
1 cup Peas, beans, carrot and capsicum chopped very fine.
1 tsp grated ginger
1 chopped onion
1/2 tsp Turmeric
1/2 tsp Sugar
1/2 tsp Lemon juice
2 tsp Cashews
A sprig of curry leaves
Salt to taste

seasoning:
1/2 tsp mustard seeds
1/2 tsp urad dal
1 tsp oil


DIRECTIONS:

Warm oil in a pan and add seasoning items. When it splutters add ginger, onions, cashews and curry leaves. Fry until onions are translucent.
Add the vegetables. Mash the potatoes
Add turmeric, salt and sugar.
Stir well. Turn off heat and add lemon juice.
