Bottlegourd soup
SERVINGS: 2 persons
TOTAL TIME: 15 mins


INGREDIENTS:

1.5 cups cubed Bottle Gourd ( no need to peel if its tender)
1/4 tsp grated ginger
1/4 tsp turmeric
1/2 yellow onion sliced (optional)

Garnish:
Finely chopped cilantro, pepper and lemon juice as needed


DIRECTIONS:

Cook Gourd and onions in 2 cups of water.
Add all other items and blend everything together to make a smooth soup, add more water if soup seems too thick, bring back to simmer add seasonings and that is it.. Serve Hot !


CREDITS/NOTES:

This recipe was given to me by my aunty Pushpachikki . It is a very easy, light
and healthy soup that I make often especially when I have leftover bottlegourd.
Optionally add 1/4 cup buttermilk for creamy texture.
