Zucchini kootu


INGREDIENTS:

Zucchini- 2 medium sized chopped to 1/2 inch cubes
Tomatoes– 2 medium sized chopped to 1/2 inch cubes
Split Moong dhal- 1 cup
Groundnuts- 1/2 cup
Turmeric powder- 1 tsp
Grated coconut- 2 tbsp
Cumin seeds- 1 tsp
Red chillies- 3
Oil- 1 tbsp
Mustard seeds- 1 tsp
Urad dhal- 2 tsp
Asafoetida- a pinch
Salt to taste
Lemon Juice– 1 tbsp
sugar – 1 tsp
Coriander leaves- 5 sprigs


DIRECTIONS:

Cook the Moong dhal, Groundnuts, Turmeric powder, Salt and a little water for roughly 15-20 mins minutes until dhal is done but not mushy.

In the meanwhile roast 1 tsp of urad dhal and cumin seeds & red chilly, Grind with coconut into a smooth paste. set aside.

In a Pan, prepare the seasoning with Oil, Mustard seeds, remaining Urad dhal and Asafoetida. Add the tomatoes and Zucchini and saute for 5 minutes. Add ground paste,dhal, salt and sugar and simmer for about 5-7 minutes, until everything is mixed well.

Mix in Lemon juice and garnish with chopped Coriander leaves.
