Quinoa Quesadilla


INGREDIENTS:

Stuffing:
1 cup cooked sweet potatoes
1 cup cooked quinoa
1/2 cup cooked black beans
Pumpkin seeds – 2 tbsp optional
Red Onions – 2 tbsp chopped
Taco seasoning – 1 tbsp
Cilantro – 2 tbsp chopped

Garnish:
Cheddar cheese – as needed
Salsa – as needed
Chili sauce – as needed
Sour cream – as needed optional

Corn tortillas- 6-8


DIRECTIONS:

Mix all stuffing ingredients well.
Warm a tortilla, add the Cheese first. As cheese starts to melt add stuffing and
rest of ingredients. Fold in half and heat both sides well until cheese melts.


CREDITS/NOTES:

I saw this unusual variation of cheese quesadilla on TV and tried it with few variations of my own (to increase the spice and protein.)
Substituting black bean burger for plain black beans us also a good alternative.
