
INGREDIENTS:
12 ounces extra firm organic tofu, crumbled
1 medium onion, chopped fine
1 green pepper
1 red Or yellow pepper
2 tomatoes
2 tbsp olive oil
1 1/2 teaspoons garam masala or taco seasoning
Salt to taste
Chopped cilantro and spring onions for garnish
Optional additions: black beans, mushrooms, asparagus.
DIRECTIONS:
Keep the tofu crumbled and ready to use. You could run once in food processor if it is hard to crumble by hand
Warm olive oil over med heat and add the chopped onions and cook until the onions soften.
Add tomatoes, chilly powder, turmeric powder, salt and stir.
Add chopped peppers. Keep stirring on medium high heat.
Now add crumbled tofu. Stir another few mins.
Add the garam masala or taco seasoning and top with chopped cilantro and green chilies.
CREDITS/NOTES:
This is an easy and tasty tofu dish.
For wraps/taco, add some black beans to tofu, top with lettuce, salsa and cheese. Similar to chipotle’s sofritos.
