Eggplant Stir fry
SERVINGS: 4 persons
TOTAL TIME: 30 mins


INGREDIENTS:

1 big Eggplant or couple of long japanese eggplants- chopped into 1 inch long strips
2-3 little Tomatillos chopped into cubes – Optional
( substitutions: sour green tomatoes )
1 green pepper – sliced thin
1 medium Onion – sliced thin
1 marble size jaggery
2 tsp spoon rasam powder or vangibath powder
salt

Seasoning:
2-3 table spoon oil for seasoning
1/2 tsp mustard seeds
1/2 tsp Urad dhal
1 red chilly


DIRECTIONS:

Heat oil, Add seasoning, when it splutters, add Onions, fry for few minutes, Add vegetables and remaining ingredients and cook until done.
