Simple Spinach Soup
SERVINGS: 4 cups
TOTAL TIME: 20 mins


INGREDIENTS:

4 cups chopped spinach
1 large onion chopped
1 clove of garlic optional
2 cup water or vegetable stock
1/2 cup milk
Salt and pepper according to taste
Crispy Croutons optional


DIRECTIONS:

Cook spinach and onion/garlic together in stock. Use a blender to make a smooth soup. Mix in milk.
Slowly Bring back to boil, add salt, pepper and croutons and cream optional.
Serve hot.
