Badam Barfi
TOTAL TIME: 25 mins


INGREDIENTS:

1 cup almonds (blanched peeled using very hot water) – see notes below

1.25 cup sugar

1/4 cup ghee

A few strands of saffron soaked in milk

1/4 tsp cardamom powder.


DIRECTIONS:

Grind the peeled almonds wit soaked saffron with a pinch of salt.

Mix this thick batter with sugar keep it on the fire in a thick bottomed vessel.

Stir till the sugar dissolves start adding ghee little by little . Continue stirring.

Add the cardamom powder when the barfi starts leaving the sides of the vessel .

Take it off the fire when the whole mass comes together like a ball spread it on the bottom of a greased plate. Spread it evenly with the help of a small greased plate.

Cut it into squares or diamonds when cool.

almond flour, use half as much sugar as flour.
