Sprout Bhel Salad

INGREDIENTS:

    Fruit and veggies:

  • 2 cups Moong Bean sprouts – lightly steamed for 1 minute if you don’t care for the raw taste
  • 1-2 sliced tart apple
  • 1/4 cup Chopped red onions
  • 1/4 cup chopped cilantro
  • 1/2 cup Blueberries
  • ( optional substitute with pomegranate )

  • 1/4 cup grated carrots
  • 1/2 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp chat masala
  • 1 cup Bhel mix ( or as needed )
  • Dressing:

  • Green coriander chutney Receipe here
  • Sweet date chutney (Receipe TBD)

DIRECTIONS:

Prepare all vegetables/fruit. Mix them and refrigerate until ready to use.
Just before serving, add the chat masala, lime juice and salt
Mix with green and date chutney as per taste and top with Bhel mix.
Mix well and serve right away.


CREDITS/NOTES:

I came up with this healthier version of bhel, it is sweet, sour spicy, crunchy and will tingle your taste buds :).
